Ahead of Valentine’s Day, we've asked some of our traders what a ‘romantic meal’ looks like to them – from a quick salad rustled up from whatever’s in the fridge to a slow, stately breakfast filled with the very best of Borough’s stalls.

Voices of the Borough Market trust

One of the many unusual things about Borough Market is that it’s run not by a private company or a local authority but by a charitable trust. This week, as the charity publishes its 2030 Strategy, which sets out its ambitions for the Market in the coming years, we’re hearing from some of the volunteer trustees who offer their time and expertise to help shape its direction. Adrian Bunnis (left), whose term as chair has just ended, reflects on 13 years at the Market. Then Shane Holland and Claire Pritchard, the new chair and vice chair, answer our questions about their relationship with food, the role of trustees, and their advice for shoppers.

The Gated Garden

The days before Valentine’s Days are always a busy time for Sharon Crane, who left life in the corporate world to turn her love of plants and flowers into a business, honing her skills and learning from other top florists along the way. Her gorgeous stall, The Gated Garden, has been at the Market since 2013, brightening Three Crown Square with its colourful array of flowers, plants and beautiful garden ornaments.

The Tinned Fish Market

The Tinned Fish Market, run by Patrick Martinez, sells a stunning selection of tinned fish from Portugal, Spain and France, every one of which has sustainability, quality and style at its heart. From sardines sourced from morning markets and tinned the same day to pole-and-line caught tuna marinated in the best olive oils, his tins are carefully sourced, rarely seen elsewhere, and extremely easy on the eye.
