On a cold, dark evening in the depths of winter there are few things more comforting and enriching than a slow cook: a feijoada or fabada, a pot roast or ragu. After the prime cuts of Christmas, now is the time to turn to those tough, hardworking, flavour-rich muscles that, with a little heat and a lot of time, can be persuaded into melting tenderness.
