We've teamed up with
Albion to create a delicious gingerbread biscuit inspired by a 350 year old recipe from our museum collection.
Albion Shoreditch Head Baker Aurelien Beguyot studied the recipe which featured red wine, stale bread and rose water. Taking this as his inspiration, Aurelien created his own biscuit in the 17th century style, complete with reduced red wine, rose water and plenty of fiery ginger - he chose not to include the stale bread!
