Borough Market - Celebrate the asparagus season

Celebrate the start of the asparagus season

The oft-stated idea that the English asparagus season ‘traditionally’ starts on St George’s Day (23rd April) turns out to be a clever piece of modern marketing, but it’s one that for the purposes of this email we’re happy to embrace: the timing does just about work, and this is a vegetable that really is deserving of the fanfare. So, Happy Asparagus Day for the weekend just passed.
The English asparagus season is short but very, very sweet. For the next two months or so, the Market’s greengrocers will be heaving under piles of green spears, each one packed with a million times the flavour of those imported out of season. On our website, you’ll find Kathy Slack’s article on the tricky art of growing asparagus, and Bee Wilson’s brilliant survey of how best to prepare it. It’s worth revisiting The Borough Market Guide to Spring Vegetables for some fantastic recipes, and there are a couple more at the bottom of this email.
